Tasty Kenyan Style Matoke And Beef

Matoke is a popular Kenyan plantain recipe loved by many people from all walks of life. The meal was initially popularly associated with Kisii land but that has since changed as many homes now prepare it for dinner or even lunch.

If you love bananas, this is what you should be having as it is prepared using the finest East African highland bananas. You can have it with beef stew for a wholesome meal. Let's learn how to make matoke and beef.
For the ingredients we will need:
1 bunch of green bananas(almost 10 bananas)
500g of beef, chopped into small pieces
3 tomatoes
1 onion
2 carrots
1/2 cup of coriander
1 tablespoon of salt
1 cup of cooking oil
1/4 cup of curry powder
Directions
To avoid ending up with sticky hands after peeling the bananas Smear oil on your hands before starting peeling the bananas. Place the bananas in a bowl of water with salt to prevent the bananas from turning dark. Next chop the tomatoes, onion, carrots, and Corriander into small pieces and put them in different bowls.
Place the beef in the cooking pot and then add one cup of water and let it boil for about 20 minutes until it's tender. You can marinate the beef in pawpaw and garlic and let it stay for about 15 minutes to tenderize.
Once the. meta is cooked add oil to the meat and let it cook as you stir. Add the onions and let it cook for about three minutes next add the tomatoes and carrots, stir and let them simmer until the onions soften. you can sprinkle some salt on the tomatoes to catalyze their cooking.

Finally, add the bananas to the beef and stir. Add water with salt, coriander, and curry powder, and let it simmer until the bananas are ready. Just like that, in minutes our delicious meal is ready. Serve it hot.
