HERB ROASTED CHICKEN DRUMSTICKS WITH VEGGIES
I'm so excited to start the last week for my #VLOGMAS 2021! Four days left till Christmas I can't believe it! The days seem to be flying so fast that soon enough we will be wishing each other a merry Christmas. I've been having fun with this challenge and it feels kinda sad-ish to almost be finishing the daily postings. Today's recipe is too delicious to describe, you just have to give it a try and it'll soon be your favorite as well.
INGREDIENTS
4 Chicken Drumsticks
4 Medium Carrots
2 Tablespoons Dried Rosemary
2 Tablespoons Thyme
2 Tablespoons Oregano
2 Tablespoons Parsley
2 Tablespoons Basil
1 Tablespoon Vegetable Oil
3/4 Teaspoon Black Pepper
METHOD
Preheat oven to 180°C
Toss chopped carrots and onions with salt, vegetable oil, dried rosemary, thyme and black pepper
Spread the vegetables on a baking pan
Add chicken drumsticks to a separate bowl and sprinkle the dried oregano, parsley, and basil, black pepper and salt
Place the chicken drumstick on top of the vegetables
Roast on the bottom rack stirring once for 30 minutes
After the 30 minutes mark place on upper rack and broil for 3 minutes
