Spicy Pumpkin & Arrowroot Soup

This fragrant, luscious spicy pumpkin and arrowroot soup are just what you need to beat the cold weather. It is full of mouthwatering flavor and can be served for lunch, dinner, brunch or any time in between.

DIRECTIONS

Step 1

Heat oil in a large pot over medium heat. Add onion and Sautee until tender, 4 to 5 minutes. Add celery, carrots, chilies, and freshly chopped rosemary, stirring, until fragrant, 3 minutes. Continue stirring and season with salt and chicken cubes.

Step 2

Stir in the pumpkin and arrowroots, then pour in the vegetable stock, stir to incorporate. Add chia seeds, season with salt and pepper, and bring to a boil. Reduce heat and simmer until slightly thickened, about 20 minutes. Stir in the cream and let cool for 10 mins.

Step 3

Transfer the soup to a blender (or use an immersion blender in the pot) and puree until smooth. If needed add broth to reach desired consistency. Taste and correct seasoning.

Step 4

Return the mixture to the pot or a large saucepan to heat.

Step 5

Serve hot in bowls and garnish with cilantro leaves. You can enjoy the soup with bread, croutons or a serving of your choice. Top each serving with a sprinkle of chia seeds and roasted pumpkin seeds.
