Tilapia in Coconut Curry

 The fish at Swahili Village is very popular because it is always fresh.   We serve whole Tilapia (including the head, so be pre-warned) fried or in a delicious coconut curry sauce.

We are offering a recipe for those of you who would love to try this at home.

Tilapia in Coconut Curry

tilapia fillets
1 tbsp olive oil (fine)
1-2 tbsps curry powder
1 cup water
14 tsp salt
12 tbsp black pepper
14 tsp chili powder
garlic cloves (crushed)
onion (sliced)
10 ozs coconut milk (12)
red pepper flakes (optional)
1Season tilapia fillets with salt, chile powder, and black pepper. Set aside.
2In an iron pot, heat olive oil; add curry powder stirring often. Allow curry powder to practically burn. Add a little water whenever the paste becomes too sticky.
3Add most garlic and onions until well coated.
4Add coconut milk. Stir. After 1 minute, add fish and remaining garlic and onions.
5Lower heat and cover for about 15 – 20 minutes.
6Serve over jasmine or coconut rice.
