The fish at Swahili Village is very popular because it is always fresh. We serve whole Tilapia (including the head, so be pre-warned) fried or in a delicious coconut curry sauce.
The Friday lunch special includes fish in coconut curry with two sides and a fountain drink for the very affordable price of $8.99.
We are offering a recipe for those of you who would love to try this at home.
Tilapia in Coconut Curry
4 tilapia fillets 1 tbsp olive oil (fine) 1-2 tbsps curry powder 1 cup water 14 tsp salt 12 tbsp black pepper | 14 tsp chili powder 3 garlic cloves (crushed) 1 onion (sliced) 10 ozs coconut milk (12) red pepper flakes (optional) |
1 | Season tilapia fillets with salt, chile powder, and black pepper. Set aside. |
2 | In an iron pot, heat olive oil; add curry powder stirring often. Allow curry powder to practically burn. Add a little water whenever the paste becomes too sticky. |
3 | Add most garlic and onions until well coated. |
4 | Add coconut milk. Stir. After 1 minute, add fish and remaining garlic and onions. |
5 | Lower heat and cover for about 15 – 20 minutes. |
6 | Serve over jasmine or coconut rice. |
